Dipping Oil Pasta
This dipping oil pasta was inspired by my favorite bread dipping oil. If it’s good enough for bread, then it’s good enough for pasta, right?
Dipping Oil Pasta
Ingredients
1/4 cup of olive oil
2 cloves of garlic, thinly sliced
1/2 teaspoon of crushed Calabrian chilies
Zest of 1 lemon
[Sea salt and black pepper, as desired]
2 servings of pappardelle
Directions
Add the oil to a pan, and heat it on medium for 2-3 minutes. Once hot, add the sliced garlic, and let it crisp in the pan until it just starts to turn brown (don’t let it get fully browned), about 2-3 minutes. Remove the oil from the heat, and let it sit for 5 minutes. After 5 minutes, add the Calabrian chilies, lemon zest, and salt & pepper.
Meanwhile, cook the pappardelle in salted water according to package instructions. Once it’s done, drain the pasta, and toss it with the oil. Top it with a little more chili oil, if desired, then serve and enjoy.
