One-Pan Rigatoni And Sausage Dump Dinner
This is what I call an ABC meal—anything-but-cook! If you’re tired of difficult dinners, then this easy, one-pan dump dinner is for you.
The Starting Five
Five things to know before making this dish!
Rigatoni is a hearty, thick pasta that won’t get too soft as it sits in the broth. You can also use something like cavatappi or farfalle, but I wouldn’t recommend a delicate pasta like capellini.
Only add enough chicken broth to just cover the pasta. You might have to adjust the measurement that I used based on the dish you’re using.
This dish is made with chicken sausage. If you decide to use pork sausage, keep in mind that it has a lot more fat and grease. To avoid getting all of that rendered fat in the pasta dish, cook pork sausage on a separate sheet pan while the pasta cooks, then slice it and add it into the pasta.
I use parsley for color, but it’s optional! You can also chop some fresh basil or used dried herbs as desired.
Store-bought vodka sauce keeps things easy, but I recommend using a high-quality brand like Carbone or Rao’s.
One-Pan Rigatoni and Sausage
Ingredients
Prep time: 5 minutes | Cook time: 1 hour
4 servings of rigatoni pasta
About 1 1/2 cups of chicken broth (it should be enough to just barely cover all of the pasta)
2 cups of cherry tomatoes
3 chicken sausages, sliced
2 cups of store-bought vodka sauce
[Optional parsley for garnish, plus seasonings as desired]
Directions
1. Preheat the oven to 350 degrees Fahrenheit.
2. In a large, shallow baking dish, add the pasta and fully cover it in chicken broth (the chicken broth should just barely cover the rigatoni, so you might need to adjust the amount used depending on the size of your dish).
3. Top the pasta with cherry tomatoes, sliced sausage, and vodka sauce, plus any desired seasonings. Cover with foil, and bake for 40 minutes.
4. After 40 minutes, remove the dish from the oven, and gently stir the mixture, then bake for another 20 minutes.
5. Remove the pasta after 20 minutes, season as desired, and gently mix it again. Garnish with parsley if you want, and enjoy!
