Creamy Smothered Chicken

 

This creamy smothered chicken is a lightened up version of one of my favorite dishes: fried chicken with gravy. It uses grilled chicken and includes sautéed kale for a better-for-you weeknight dinner.

 

Creamy Smothered Chicken

Ingredients
3-4 prosciutto slices
3-4 chicken cutlets
1 1/2 cups of half & half
1 1/2 cups of shredded Parmesan
1 cup of chopped kale
[Sea salt & black pepper]
[Olive oil]

Directions
Season chicken cutlets with salt and pepper. Add olive oil to a pan, then add chicken cutlets. Cook on medium heat for 3-5 minutes per side, or until the internal temperature reaches 165 degrees Fahrenheit.
Meanwhile, in a separate pan, add the prosciutto, and heat on high for 2-3 minutes per side, or until it gets nice and crispy. Remove the prosciutto from the pan, and add the half & half to the pan; let it heat for about 2 minutes. Then, whisk in the shredded Parmesan. Let the sauce heat and thicken for 5-7 minutes. Then, add the kale. Season the sauce with salt and pepper, and cook another 2-3 minutes or until the kale cooks down.
Crumble the prosciutto, and add it back into the sauce, then pour the sauce over top of the chicken. Serve and enjoy!
