Brie and Blueberry French Toast
This brie and blueberry French toast is a spinoff of my bacon, brie, and blueberry grilled cheese—I kept bacon out of this one (five ingredients hehe), but feel free to add it back in!
Brie & Blueberry French Toast
Ingredients
12 slices of French bread, cut about 3/4-inch thick
6 slices of triple crème brie, cut 1/4 inch thick
6 tablespoons of blueberry preserves or blueberry jam
2 large eggs
2 tablespoons of heavy cream or whole milk
[Butter or olive oil, for toasting]
Directions
1. Add a slice of brie and a tablespoon of blueberry preserves in between two slices of French bread to make the sandwich; make six sandwiches.
2. In a bowl, whisk eggs and cream together. Add butter or oil to a pan, and let it heat on medium-low heat.
3. Dunk the sandwiches in the egg mixture, then add them to the pan. Cook the French toast sandwiches until golden brown on both sides, about 3-5 minutes. Serve with syrup and a side of bacon, if you want!
