French Onion Pasta Salad
This pasta salad is surprisingly cozy! With all the flavors of French onion soup, it’s perfect to enjoy any time of year.
French Onion Pasta Salad
Ingredients
4 servings of bowtie pasta
1 Spanish onion, thinly sliced
[A splash of olive oil]
[Sea salt and black pepper]
1/4 + 1 tablespoon of low-sodium beef broth
1/4 cup of mayonnaise
1 tablespoon of French onion soup mix
[Optional chives, for garnish]
Directions
In a large pan, add the sliced onions with a splash of olive oil, plus salt and pepper. Let the onions cook on low heat for 20 minutes. Stir them occasionally to prevent them from burning.
After 20 minutes, add the beef broth, turn the heat up slightly, and let the onions cook another 15 minutes, stirring occasionally.
Then, add the tablespoon of beef broth, and let them cook on low for another 10 minutes or until they’re golden brown. Remove from the heat, and let them cool.
Meanwhile, cook the pasta according to package instructions, then drain it and rinse to cool it off.
In a large bowl, combine the pasta, mayonnaise, French onion soup mix, and caramelized onions. Gently toss it to combine everything, then garnish with chives if using. Chill 20 minutes before serving.
