15 Minute Taco Tortellini

You only need 15 minutes for this easy taco tortellini recipe—there’s no chopping and no dicing, making this a truly low-effort dinner recipe!

15 Minute Taco Tortellini

Ingredients—Makes about 2 servings
8 ounces of 96% lean ground beef (if you choose to use fattier ground beef, make sure you drain the fat once the beef is cooked!)
1 package of fresh tortellini (about 2 1/2 cups—I used Buitoni)
1 tablespoon of taco seasoning, or more as desired
1 cup of light cream (you can use whole or 2% milk for a leaner option)
1 1/2 cups of shredded taco-blend cheese

Directions
1. Bring a medium-sized pot of water to a boil.

2. While the water heats, add the lean ground beef to a large pan, and sauté it on medium-heat until it’s browned through, about 7 minutes.

3. Fold the taco seasoning into the cooked beef, then add the cream and shredded cheese.

4. Let the cream and cheese heat for 2 minutes, then fold them into the meat until everything is fully melted and combined. Turn the heat to the lowest setting, and let the meat sauce simmer while you cook the tortellini.

5. Once the water is boiling, add the tortellini, and cook for 3 minutes or according to package instructions.

6. Drain the tortellini, add it to the meat sauce, and fold everything together. Top it with a little more taco seasoning, and serve.
