Bacon and Cheddar Smashed Potatoes
These bacon and cheddar smashed potatoes are basically a cheesy, crunchy spin on a typical potato chip. You won’t be able to eat just one!
Bacon and Cheddar Smashed Potatoes
Ingredients
25 small creamer potatoes
For each potato:
1 tablespoon of shredded cheddar
1 teaspoon of chopped cooked bacon
Sea salt
Chives, for garnish
Sour cream, for dipping
Directions
1. Prepare the potatoes according to package instructions (I microwaved them with water, or you can boil them for 15 minutes).
2. While the potatoes cook, preheat the oven to 425 degrees. Line two large baking sheets with parchment paper. Add small cheddar piles (1 tablespoon each) to each baking sheet, leaving about 2 inches of space between each pile. Then, top each pile with 1 teaspoon of chopped bacon.
3. When the potatoes are cooked, use parchment paper and a rounded glass to “smash” the potatoes into the cheddar and bacon. Repeat for all potatoes. Sprinkle each smashed potato with sea salt (for extra crisp, brush a little olive oil over the potatoes, too). Then, bake for 15-25 minutes or until the cheddar is nice and crispy—check the bottoms of the potatoes after 15 minutes to make sure the cheese doesn’t burn.
4. Garnish the smashed potatoes with chives, and serve them with sour cream.
